This Forged Steel Knife is made from 3 layers. The core layer of AUS 10 Stainless Steel is clad with two layers of high-carbon steel. One on each side. This layering created a super sharp blade that is durable under heavy use.
The perfect weight balanced full length handle is made from Micarta. It is made for sure holding working in wet conditions. The frost surface finish prevents food from sticking to the knife body. Mirror polished stainless steel bolster and butt end design have made this knife even better. Every Zhen Premium knife comes with its own hand crafted gift box or storage box.
The most important attribute for a kitchen knife is its ability to be sharpened and stay sharp. The AUS 10 stainless steel from Japan is heat treated to a hardness of HRC 60-62.
The oval design of the handle gives you comfortable use both left and right handed.
All Zhen knives have a traditional western double bevel edge.
DON'T chop bone or use knife on hard surface like glass cutting board, tile, and granite. Hand-wash your blades with gentle dish soap, rinse clean and towel dry immediately. Recommend to sharpen your blades with a whetstone at an angle of 15 degrees. Stainless Steel is imported from Japan and quality made in Taiwan.
