This super sharp AUS 10 Japanese stainless steel knife is produced by Aichi Steel in Japan. The AUS 10 steel has added vanadium that improves the wear resistance, blade toughness and makes it easier to sharpen than other stainless steel knives. The 3-layer blade has a cutting core of AUS 10 with a soft outer wrap, making it easy to maintain. The knife has a full tang design with an oval micarta handle to prevent slipping and allows for a comfortable grip. Mirror polished stainless steel bolster and butt end design have made this knife even better. Every Zhen Premium knife comes with its own hand crafted gift box or storage box.
The most important attribute for a knife is its ability to be sharpened and stay sharp. The AUS 10 stainless steel from Japan is heat treated to a hardness of HRC 55-57.
The oval design of the micarta handle gives you comfortable use both left and right handed.
All Zhen knives have a traditional western double bevel edge.
DON'T chop bone or use knife on hard surface like glass cutting board, tile, and granite. Hand-wash your blades with gentle dish soap, rinse clean and towel dry immediately. Recommend to sharpen your blades with a whetstone at an angle of 15 degrees. Stainless Steel is imported from Japan and quality made in Taiwan.
