Oil finishes
I have used oil over the years. It is slow. It does not protect like polyurethane. But. I did a set of alder kit. cab. 15+ years ago. 4 coats of oil+2 coats of caunarba wax. Wife cooks everyday. I didn't stain or dye--best looking cabinets I ever saw. They have a depth than nothing else can deliver. (check out George Frank)

Don't Bother
I had forgotten how much I dislike oil finishes until I tried this one. Slower than the stated 24 hours to dry between coats and a flat dull finish no amount of buffing is going to improve. Save yourself the time and frustration and just learn to use shellac or some other quality method of finishing.
