This Kumagoro Nakiri Damascus Knife is a vegetable knife that features a straight blade and edge and is used in a simple push cut. The blunt end provides a bit of safety in the kitchen.
The Damascus steel used to craft this knife is made by cladding a hard core with a softer steel. This Santoku Knife’s blade is made using ZA-18 Cobalt Steel from the Aichi Steel Company as the core, along with a 73 layers of AUS-2 Stainless Steel, to create a most beautiful knife.
Japanese knives are only sharpened on one side, either right- or left-handed; this one is right-handed.
This Kumagoro knife has a traditional D-shaped handle, made from Baked Chestnut that is intended to fit comfortably into the curve of the fingers as they curl around the handle when gripping the knife. When held properly, the handle stabilizes the grip and gives better control.
Kumagoro brand knives are handmade, so they can vary in size and thickness. Unevenness in finish can occur.
