    The Western Deba or Yo Deba is a double-edged Western version of a Japanese Deba or Chef Knife with a heavy, thick blade designed for cutting fish, meat, poultry, shrimp, lobster and crab. It is not recommended for cutting hard bone as it could damage the blade. This knife’s blade is 8.26" long and features a 3-layer blade construction – a cobalt base alloy steel core clad in outer layers of softer 13 Chromium Stainless Steel for added strength. A laminated handle completes the knife. This superbly edged kitchen tool weighs about 11.2 ounces, heavier than traditional knives, because the spine is twice as thick as most Japanese knives.

    Fujitora Knives are made by the same company that produces world famous Tojiro knives, but you may not have heard about them because they are made for the Japanese domestic restaurant and professional market and are not generally exported for retail. As such, we feel honored to be able to offer these extraordinary knives to our customers.

    Fujitora and Tojiro Knives come from a culture long influenced by a feudal society in which the producers of goods in each area presented their best goods to the sovereign of the prefecture. The craftsmanship necessary to produce these goods was passed down from generation to generation with an emphasis on not only making the best but refining the best until it was better than before. The Fujitora factory is located in the Tsubame-Sanjyo area in Niigata prefecture – an area long known for producing cutting tools, from swords to woodworking and knives.
