This Forged Steel Knife is made from 3 layers. The core layer of VG-10 Stainless Steel is clad with two layers of high-carbon steel, one on each side. This layering created a super sharp blade that is durable under heavy use.
The perfect weight balanced full length handle has TPR (rubber) grip sure holding for working in wet conditions. The frost surface finish prevents food from sticking to the knife body. The most important attribute for a chef’s knife is its ability to be sharpened and stay sharp. The VG-10 stainless steel from Japan is heat treated to a hardness of HRC60-62.
The oval design of the handle gives you comfortable use both left- and right-handed.
All ZHEN knives have a traditional western double-bevel edge.
DON’T chop bone or use this knife on a hard surface like a glass cutting board, tile, and granite. Hand-wash your blades with gentle dish soap, rinse clean and towel dry immediately. We recommend sharpening your blades with a whetstone at an angle of 15°. Stainless steel is imported from Japan and quality made in Taiwan.
