    A Santoku knife is an original Japanese design incorporating a sheep’s foot design and a more linear cutting edge with limited travel. It is designed for slicing downward with a single cut with less rocking motion than a western chef’s knife. Saladini’s interpretation follows this design to perfection reflecting typical Saladini craftsmanship. Excellent balance combined with stainless steel and Italian olivewood. 420B Stainless Steel, hardened to HRC 55-57, was selected for the blades because it releases the least chrome during use. Hand-wash with mild detergent or soap, and use sodium bicarbonate to remove any stains soap cannot remove.

    Saladini Knives date back to the early days of Scarperia, an Italian village founded by the Republic of Florence on September 8, 1306, as a military outpost. Sometime in the 15th century blacksmithing activities began that eventually led to the village becoming known as the “town of knives.” By the middle of the 19th century, the Saladini family had become well-known as master blacksmiths. A century later, in 1984, young Leonardo Saladini became an apprentice to his uncle, and in 1997 he struck out on his own and opened Saladini’s Cutler Shop.

    This blacksmithing heritage is reflected in Saladini Coltellinai Knives.
