Our 8¼˝ Yodeba Knife is made for heavy duty use by the professional chef. The blade is forged Cobalt alloyed high carbon steel. It is laminated on each side via the D.P. method (Decarbonization Prevention, Patent No.962010) to maintain high performance during the lifetime of the knife. The blade is then heat treated and tempered to Rockwell 62. The ferrule is made of 18-8 Stainless Steel. The handle is made from environmentally friendly "Eco Wood". Eco Wood is manufactured from recycled wood fiber infused with a plastic material via high pressure injection and will last a lifetime. Blade length is 8¼˝ and overall length is 13¼˝. Each knife is sent fully honed to a razor edge with instructions for care and use.
