Our 7½" Satsuma Knife comes from the Tosa Region on Shikoku Island, where master blacksmiths adhere to the old ways. The maker hand hammers a layer of high carbon "white steel" between two layers of soft wrought iron. It is then tempered to Rc63 and will hold an edge far longer than any Western made knife. The handle is made from Ho wood.
This style of knife is very popular in the Satsuma region of Japan. Its shape is great for slicing meats and vegetables. The blade is a bit thicker to withstand heavier cuts in a variety of food types. The blade length is 7½˝ and overall length is 12½˝. They are sent fully honed and ready for use with instructions for maintaining this edge.
