A chef’s knife is probably a cook’s most important tool in the kitchen. One of the most versatile knives, it can be used for slicing, dicing, and much more. Blade length is 7-9/16", with an overall length of 12-3/4".

Crafted from 66 layers of Japanese Damascus steel

VG – 10 steel core with a Rockwell hardness of 60 - 62

Maintains an extremely sharp edge for a long period of time

It came out of the box razor sharp. Has a great balance and held it's edge for over a month without any sharpening. Can cut a lime completely through by just lightly pushing down without using a slicing motion right out of the box. Only criticism would be the rivets that came with it broke, but not a problem for me because I used pins anyway. I don't know if I just got a good one, but I definitely recommend this knife. Very nice steel, good balance and performance for every day use. However, this knife is not a Shun, not even close. The grind is not top quality, and sharpness out of the box is just OK. However, after some time on the whetstone set the steel shows its potential. I got a razor sharp edge that seems to hold well. After adding a nice rosewood handle, the finished product looks great, and is very functional. I have only one gripe now about the blade: I like to grip the blade with my thumb and forefinger while cutting for more control but the top of the blade is ground to a sharp square that hurts my finger after a while. I guess I will round it off slightly one of these days. This knife is now "The" knife in my kitchen. It came out of the box razor sharp. Has a great balance and held it's edge for over a month without any sharpening. Can cut a lime completely through by just lightly pushing down without using a slicing motion right out of the box. Only criticism would be the rivets that came with it broke, but not a problem for me because I used pins anyway. I don't know if I just got a good one, but I definitely recommend this knife.

Bottom Line Yes, I would recommend this to a friend

You get what you pay for in this blank. Very nice steel, good balance and performance for every day use. However, this knife is not a Shun, not even close.
