Comments about Small Knife Jig :
I can usually sharpen a knife on my own pretty well. I bought a Tormek T3 to sharpen my chisel and gouges and it does everything the company says it does. On long kitchen knives that have a really bad edge (mostly ones that have been run thru an electric sharpener) the initial edge can be a challenge to establish. Well not with the small knife jig on the Tormek. Within a few minutes you can establsh a "perfect edge". I then take those knives to a japenese water stone and a leather strop and they come out like razors. Its a great product. It will not sharpen long flexible knives though, but Tormek has a long knife jig for that.
